Cucumber Tea Sandwiches

Slice the cucumbers thinly, using a knife or mandoline

Stir together butter, lemon juice, and chives

Tea sandwiches are the perfect food to serve at social parties such as baby and wedding showers, cocktail parties, or birthday parties. They are especially good for for dressy events, when guests will be loathe to attempt any “messy foods” such as sloppy joes!

My favorite tea sandwich is a cucumber version. We served them for my wedding shower and I made them recently for my niece’s baby shower. They are refreshing and light, wonderful for summer parties, and the recipe is simple!

CUCUMBER TEA SANDWICHES

Make 12 tea sandwiches, double, triple or adjust as needed
Must be made shortly before serving (2-3 hours at most)
  • 1 seedless English cucumber
  • 12 pieces of white bread (use a good quality bread)
Chive Butter Ingredients
  • 6 tablespoons unsalted butter, softened
  • 2 teaspoons (preferably fresh) lemon juice
  • 1/4 teaspoon salt
  • 2 tablespoons finely chopped fresh chives
  1. Stir together first three ingredients until well blended, then add chives
  2. Spread chive butter on bread, both bottoms and tops
  3. Arrange 2 layers of thinly sliced cucumber on bottom layer (a
    mandoline
    makes slicing easy!)
  4. If you would like you can lightly sprinkle with salt and/or freshly ground pepper
  5. Add top bread
  6. Cut off crusts then cut diagonally
  7. Wrap well and refrigerate until served
Garnish with curled scallions
  1. To curl scallions clean and trim leaving 3-4 inches of green with white part
  2. Then slice longwise through greens a few times
  3. Immerse in ice water to curl
  4. Place curls on sandwiches
